Double Date Dinner Party

What a great night spent with friends!  Adam and I don't get to spend too much time with our friends.  We're transplants from New Jersey, and while I did go to school in the area many of my friends have since moved back to their hometowns. It makes us appreciate the time that we have with them even more!

Tonight we had a double date dinner party with another couple - a friend of mine who was my roommate in college along with her boyfriend.  You're probably wondering what was on the menu...we had "build your own burritos"!

Having a "build your own" meal is a great idea when you have guests over because you can make a variety of things and everyone can choose what they want to include.  We had black beans with lime, sauteed onions, salsa, Follow Your Heart "mozzarella cheese" and guacamole on Ezekiel wraps.  On the side I made a mixture of sauteed baby greens with a little salt.  Everything was great and the company was even better!

Of course I was so excited about all that food that I forgot to take a picture...but I did snap a picture of the cupcakes that I made!


The recipe that I used was from the book Vegan Cupcakes Take Over The World. If you don't already have this book, buy it now!! It is available on Amazon and there are so many great cupcake recipes - I made the key lime last week and they were so incredible too!

Now that I'm in a food coma I guess I should get some sleep - three more days before a nice long 3 day weekend!

Keep Chuggin' Along

So sorry for the infrequency of posts lately!  I have no excuse other than I've been super stressed and busy at work, which has unfortunately bled over into every other aspect of my life.  A lot of big projects and events all at once has made for one very tired girl...I keep telling myself to just keep chuggin' along!

I've definitely been slacking off in the workout department too.  I need to make it a point to get out for a good 4 mile run tomorrow, because I signed up to run in a 4 mile road race on Friday!  While I've run this distance many times, this will be my first ever competitive run of any kind.  I'll have a friend there running with me so that should keep me motivated to push through :)

I also got this awesome new pair of running shoes last week from a local specialty running shoe store in my area - and I haven't even had a chance to take them out for a test drive yet!  



I can't wait to try them out!  I have extremely wide feet and very high arches so I tend to have a lot of trouble finding shoes that fit and support properly, but when I tried this on and took a few strides on the treadmill I felt like I was running on a cloud!  They are the Addidas Boost, has anyone tried them out?

Tonight we have some friends coming over for dinner - I'll be sure to post what I made and some pics of the delicious and healthy food. It'll be nice to catch up, relax and just forget about everything else for a few hours!
